I found this recipe a couple years ago (absolutely no clue where – possibly Apartment Therapy?) and have been trying to find time to make it since. Last week I finally found the time and it’s awesome! The flavor is like honey. Delicious. Make certain you gather the dandelion heads from a pesticide and dog poop free area – but I don’t really need to tell you that do I?
- 2 Cups dandelion petals (greens removed)
- 2 Cups water
- 1 cup sugar
- 2 Tspns fresh lemon juice
- 2-4 Tspns pectin
|Bring 2 cups of water to a boil and add dandelions. Boil 10 minutes over medium heat. Strain Dandelions and return the liquid to the pot. Add the sugar, lemon and pectin then bring to a boil again before reducing heat to a simmer. Stir with a wooden spoon until syrupy. Pour into sterilized jars, seal and process in a hot water bath for 10 minutes. |
Yield is about a pint
I will confess my finger nails are still black from removing the flower petals from the green stems. I’m not a big fan of gloves but it couldn’t hurt next time. If you don’t have any experience with canning don’t be intimidated. I’m a novice as well though I have watched my Mother for years pack away acres of tomatoes and what-not. It’s not hard. Buy a starter kit with everything you need and look up some basics on-line. And if the jars don’t seal, don’t eat it.
