I’m so crazy busy in the perennial and vegetable garden that I’m just putting a few photos up today. Hope your garden is growing well too!
And to get rid of all that zucchini that’s on the way, a couple of my favorite recipes:
Zucchini Recipe #1 –
As much zucchini as you want
Slice the zucchini into about 1/4 strips, oil them up, lay them on a cookie sheet or broiling pan. Bake them until almost tender, sprinkle the top with parm and then run them briefly under the broiler (my Mom does a thin layer of her canned tomatoes or tomato sauce under the parm – also really good).
Zucchini Recipe #2 –
as much zucchini as you want
you can also add eggplant, garlic, basil, thyme, oregano other squash or anything else you have lying around and need to use up.
Chop the larger veggies to a bite size portion. Put a glug of olive oil in the bottom of a large, cast iron pan. Throw them all in and saute until tender. Sprinkle a little salt or cheese on at the end if you like. My kids like to help in the kitchen and this is a great recipe for them to stir a bit.
