Does anyone make quiche anymore? It’s one of those dishes that seem a bit antiquated, but when you make it and serve it, guests wolf it down like they haven’t eaten in days.
I love making quiche – it’s so easy, you can put all kinds of ingredients into it, and you can have a protein packed option for modified vegetarians. The recipe below is my ‘standard’ and then I add various cheeses and fillings depending on what I have lying around the fridge or growing abundantly in the garden.
- 1 cup cheddar, swiss or gruyere cheese (freshly grated)
- 5 Large eggs
- 2 1/2 Cups half & half
- salt and pepper (to taste)
- dash nutmeg (freshly grated)
- diced ham, cooked spinach, slowly sautéed onions, blanched broccoli, lobster, mushrooms etc. (add any filling that makes you happy)
- 1 pie crust (I use pre-made, but use your own favorite recipe)
|Pre-heat your oven to 375|
|Roll out your prepared crust and gently place it in a standard pie plate|
|Place the grated cheese in the bottom of the plate (you can add more if you like)|
|If using any meat or vegetables toss them in now.|
|Mix the eggs and half and half together, add your salt, pepper and nutmeg and then pour the mix over the cheese and veggie mixture.|
|Bake for 40 minutes until puffed up and brown. Can be served hot, warm or at room temperature.|
I once threw a co-ed baby shower for a girlfriend and served lobster quiche. It was my first time trying to prepare it with lobster meat and I really didn’t know how it would turn out or if the men in the group would be satisfied (I grilled chicken too), don’t buy that old saying that ‘real men don’t eat quiche’. You’ve never seen so many men elbowing pregnant ladies out of the way to get to the last piece! It really is a foolproof dish and should be in everyones repertoire.
