As many of you know, the East Coast of the U.S. was hammered this past weekend with an epic snowstorm, (we personally got about three feet), so while we we’re squirreled away waiting for everything to end, I whipped up a huge pot of Old School Split Pea Soup. It beat shoveling!
Old School Split Pea Soup
- Couple Tablespoons Olive Oil
- 2 Smoked Ham Hocks (I had about 2 lbs)
- 1 Medium Onion (Finely Chopped)
- 3 Carrots (Finely Chopped)
- 4 Cups Split Peas
- 3 Bay Leaves
- Salt and Pepper (To Taste)
In all honesty I actually doubled the amount of split peas and went to eight cups for my weekend batch. I have enough for an army, but it was a perfect meal for the long, snowy weekend. And the reason I add the second batch of peas towards the end is that I like a bit of texture in my soup. If that’s not your thing, just put all the peas in at the same time.
